Beef and Cabbage Soup

At the end of a cold winter day, I just want something hearty and warm to fill my stomach. 

Sometimes I want something that meets that criteria but, does not involve me slow cooking something all day long. Although, those slow cooked meals are always a favorite, most days we don't have the time in our schedule.

This soup has very basic ingredients and can feed a crowd. Or like me.... Teenage boys and a husband that still eats like a teenage boy.

Serve with a slice of french bread or dinner rolls.

Beef and Cabbage Soup

Ingredients

  • 1 lb Ground Beef

  • ½ Yellow Onion, diced

  • 4-6 Garlic cloves, minced

  • ¾ tsp Dried Basil

  • ½ tsp Dried Oregano

  • ½ tsp Paprika

  • Salt and Pepper to taste

  • 4-5 ribs Celery, chopped

  • 3-4 large Carrots, diced

  • 28oz can Diced Tomatoes

  • 6 Cups Beef Broth

  • 3 cups Green Cabbage, chopped

Directions

  1. In a large stock pot over medium-high heat, brown the ground beef with the seasonings, onion and garlic.

  2. When the beef is just browned, add in the celery and carrots. Stir frequently and cook until the veggies are tender. About 5 minutes.

  3. Pour in the diced tomatoes and beef broth. Stir well, cover and let come to a soft boil.

  4. Add the chopped cabbage and continue to cook until the cabbage is tender. About 3-5 minutes.

  5. Turn off the heat and let sit for 5 minutes before serving.
