Apple Cranberry French Toast Casserole

Everything about this breakfast casserole screams Christmas!

Assembly is fairly simple. I appreciate a breakfast that I can make ahead of time and just have to pop in the oven on Christmas morning. There are always so many other things going on. I want to spend my time sipping my coffee as I watch my kids light up and discover what has been waiting for them under the Christmas tree.   

Make this up to two days ahead of time and keep it covered and in the fridge until you are ready to bake. 

We like to top it with a dusting of powdered sugar before serving. However, if you have an extra sweet tooth, drizzle a bit of maple syrup on top.
